Notes

Mike Riddle is a perennial winner at the Mayfaire competition, having won Best of Show in 2001 with his Tripel Trouble. This year he returns with a second runner up Best of Show and a slew of medals.

From Mike's notes:

Collect 8 1/2 gallons and boil down to 6

Add a very big starter of Wyeast 1084. Rack when quiet and bottle a week later. Best after 2-3 years.

It will finish with a very high fg - 1.030-1.040, but that balances the ibu's and roast.
