Well, on this second run on the new Falcons Brew Deck, we had planned to do a simple XPA for the 2005 Southern California Homebrewers Festival. The recipe was Pliny the Toddler.

A combination of the switch to Daylight Savings Time and early morning fuzziness led to a small miscalculation in the weigh out of the malt bill. We ended up with a total of 27 extra pounds of base malt. This error, combined with the purposeful low-ball efficency estimate on the brew deck, led our simple 1.055 XPA into becoming the world's first big gnarly 1.096 XXXPA. Once the error in runoff was figured, we boosted the hops with an additional 4 ounces to increasing the bittering level.

Henceforth this brew (which went very easily on the deck) will be known at Pliny the Unwanted in a tip of the hat to the original inspiration for the brew, Pliny the Elder and Pliny the Younger brewed by Vinnie Cilurzo at Russian River Brewing.

Congratulations and Happy Birthday to Co-Brewmaster Nicky Salerno!
