2005 February Chili Cookoff Winner - Nancy Lee's Chili

Di's been entering the annual chili cookoff for a few years now and has always hovered near the top of the entrants. This year she took the top prize, receiving a free year's membership and a 12 pack of 2004 Sierra Nevada Bigfoot for her winning chili recipe.
Yield: 6 quarts

Amount Unit Ingredient
20 oz Hurst's 15 Bean Soup Mix (Beans only - 1 bag)
20 oz black beans
1 lbs pork fat back
Amount Unit Ingredient
1 can 14.5oz can stewed tomatoes
5 cans tomato paste
12 cloves garlic, smashed
1 lb smoked sugar cured bacon (Farmer's), cooked, crumbled
0.75 cup Indonesian palm sugar sauce (Kecap Manis Sedang)
0.5 cup dark molasses brown sugar (Billington's)
0.5 cup Vietnamese sweet chili sauce (nuoc cham)
3.5 Tbsp African chili powder
0.5 cup olive oil
2-3 large yellow onions, minced
salt and pepper to taste
Prep (Day before):
Soak beans and then cook with pork fat back. Drain and discard pork.

Combine all ingredients except onions, salt and pepper and cook slowly. Add onions and spice to taste before serving.
