Mead, Cider and Sake

" Traditional Mead;  Sweet, Still "

by Steven Wells, Sacramento, CA. 

For 5 gallons:

Honey:  18 lbs.

Yeast: Killer Wine Yeast. 

Water: Tap water. 

Procedure: Mix honey and water and boil for 30 min.  Cool and pitch
yeast.  Batch increase to 8 gallons of unknown gravity after 2 weeks
primary.  O.G. 35 Brix, F.G. not recorded.
